The Ion Grove Cafe, featuring locally sourced foods, is set to begin operations in early spring 2024 at Willard Airport in Savoy.
According to a press release from the business, Ion Grove “goes beyond the typical grab-and-go meals. It will feature a coffee robot, local retail products and a menu that puts a spotlight on locally sourced foods, all conveniently located planeside.”
The menu, according to Ion Grove representatives, includes vegan and vegetarian options and was developed with food allergies in mind. Drinks will feature Coke products, coconut water, coffee and tea.
Merchandise will be offered from local artists and gift items.
The airport’s most recent food vendor, Einstein Bros. Bagels, closed in spring 2023 after a six-year run. Since then, vending machines have provided the only source of food or drink at Willard.
“Our goal is to make the airport experience not just bearable but enjoyable,” said Phil Rowell, co-founder of Ion Grove. “We want to provide quality food and services that have a positive impact on our travelers. The idea was inspired by our love for our community, our passion for good food and the desire for travelers to have a uniquely welcoming place to relax and recharge.”
