A new ice cream shop and bakery opened in Fisher, offering a wide assortment of sweet treats and drinks to satisfy any confection craving.
Jessie Cox, a lifelong Fisher resident and self-taught cookie decorator, opened Main Street Cookies and Cream on July 24 in downtown Fisher.
Cox says business has been going great since opening. “It has been busy and wonderful! We are learning so much and having a great time!”
In addition to a variety of homemade cookies and decorated sugar cookies, Main Street Cookies and Cream also offers super premium hand dipped ice cream from Chocolate Shoppe in Madison, Wis.
Some of their most popular flavors include “Exhausted Parent,” bourbon-spiked espresso ice cream swirled with bittersweet chocolate chunks, as well as “This $&@! Just Got Serious,” salted caramel ice cream with sea salt fudge and salted cashews.
Cox had always loved the idea of opening a “little shop” in her hometown but had never really considered selling ice cream. However, Cox knew it was something the community wanted.
“The town had been really excited to have an ice cream shop, so we incorporated it in and honestly it’s been the busiest aspect of the business and I’m so glad we did it,” Cox said.
The menu also features homemade waffle cones, Lotus plant-based energy drinks and coffee drinks, featuring coffee roasted at Columbia Street Roastery in Champaign. In addition, pastries from Central Illinois Bakehouse are available, including the famous croughnuts on Friday and Saturday mornings.
Cox got into baking and decorating cookies in 2018 for friends and family, but it started to grow from there.
“A friend of a friend would reach out, and so on. It got to the point where we started thinking that this could be something I could do on a more full time basis,” she said.
So in May of this year she took a huge leap of faith and decided to leave her job as an RN to open the shop.
“When the opportunity came up to rent a space here in my hometown, we jumped on it,” she said.
Cox said the biggest challenge has been not having enough hours in the day to get everything done. “I have so many ideas in my head that I want to make happen.”
But she’s most excited to be able to give back to her community.
“My favorite part about running this business is that I get to provide something fun and different to our little community,” Cox said. “I love this town and I hope to have many opportunities to give back to the people here.”
